You already know that I love a chopped salad full of fun ingredients. This salad brings in yummy fall flavors to make a salad that tastes fresh and hearty.
As with all salads I love, this one is highly customizable, filled with healthful and delicious ingredients, and can serve as any meal of the day.

The Perfect Fall Salad

Ingredients
For the ground turkey:
1 package of ground turkey
Seasonings: I use salt, pepper, garlic powder, and onion powder.
For the chopped salad:
1 bunch of Dino kale
1 sweet potato
3 mini cucumbers
1 shallot
1/2 cup grated Parmigiano Reggiano
For the dressing:
2 tablespoons miso
1 tablespoon fresh ginger
2 garlic cloves
2 tablespoons rice vinegar
2 tablespoons olive oil
1 tablespoon toasted sesame oil
2 tablespoons soy sauce
Directions
Prepare the dressing
In a blender, combine 2 tablespoons miso, 1 tablespoon fresh ginger, 2 garlic cloves, 2 tablespoons rice vinegar, 2 tablespoons olive oil, 1 tablespoon toasted sesame oil, and 2 tablespoons soy sauce. (A Nutribullet works well.)
Blend all the ingredients until smooth.
Taste the mixture and adjust the proportions to your liking.
This should yield approximately 1/2 to 2/3 cup of dressing, which should be enough to dress the salad and have some extra for the ground turkey.
Cook the ground turkey
Heat a pan with 1 tablespoon of olive oil.
Add the ground turkey with a pinch of salt and pepper, 1 tablespoon of garlic powder, and 1 tablespoon of onion powder.
Cook for 10 to 15, stirring occasionally until the meat is no longer pink or the temperature reaches 165 F.
Add some of the miso dressing to the pan for extra flavor.
Air fry or bake the sweet potato
Chop the sweet potato into cubes.
Season with salt, pepper, garlic powder, and onion powder.
Air fry at 400 for 6 minutes, flip, and continue to cook for another 6 minutes.
Prepare salad
Chop the Dino kale, mini cucumbers, and shallot, and add to a bowl.
Add the sweet potato.
Pour the miso dressing over the salad and mix.
Add the cooked ground turkey on top or mix it in.
Grate fresh Parmigiano Reggiano on top.
